Elements of Composition (Blend 1) 750ml de Garde Brewing, in Collaboration with Jester King Brewery and Sante Adairius Rustic Ales Commemorative glass designed by Jester King for this special beer. Elements of Composition is a blend of beer and friendship spanning the course of years. In February 2016, brewers from De Garde Brewing, Jester King Brewery, and Sante Adairius Rustic Ales in met in Tillamook, Oregon to blend beer from each of their respective breweries. Three year old, 100% spontaneously fermented beer from De Garde was blended with two year old, 100% spontaneously fermented beer from Jester King, and mature, foudre aged saison from Sante Adairius. The result is a beer distinct from, but not greater than, the sum of its parts. I originally purchased this bottle at Jester King Brewery, along with a commemorative glass. Up for sale is a complete vertical of the BFM flagship beer Abbaye De Saint Bon Chien, from the very first release up to the 2012 vintage. This Biere de Garde or Belgian Strong style sour ale is generally blended after significant aging in wine and various spirit barrels, with the taste coming off as somewhere between a port wine and a barrel aged sour beer. This 9 bottle lot includes one bottle from each vintage year, including one of each of the extremely limited first two vintages (2004 and 2005). These very first two are unique in that they were limited to 1000 and 2000 bottles respectively and were blended in a very different manner that is reflected in the ABV's. Some notes: L'Abbaye de Saint Bon-Chien 2005: Abbaye de Saint Bon-Chien 2005 was blended from 1 wooden barrel of grappa, 3 of Pinot Noir, 6 of merlot used for Abbaye de Saint Bon-Chien 2004 It is floral with a touch of lavand oil. It just has a bit of carbonation. To give nerves to the beer. It is of course a bit different as the other vintage, a bit more alcohol, the same pH, a good balance and a long and powerfull aftertaste. It is floral with a touch of lavand oil. Notes from Jerome Rebetez: "It is different from 2004, it is stronger at 15.0% Abv. and more spicy than 2004. I compared the 2 vintages and for me, it is a bit more complex in 2005 than in 2004, with a longer finish. But the balance between sweetness and sourness is definitely different." L'Abbaye de Saint Bon-Chien 2006: Notes from Jerome Rebetez: "For 2006, it will be more 2004-like, with less alcohol. And I guess the bouquet is going to be more fruity-winy.
